Minnesota Turkey and Wild Rice Casserole Recipe

Makes 6 servings | Gluten free and dairy free

Step 1

¾ c. wild rice

Step 2

2 tsp. olive oil
½ c. onion, chopped
1 c. green pepper, chopped
1 c. celery, thinly sliced
1 ½ lbs. turkey breast

Step 3

10 black olives, sliced
8 oz. can of water chestnuts, drained and sliced
2 T. Bragg Liquid Aminos
1½ c. chicken broth
4 almonds per serving, chopped (for garnish)

Directions:

  1. Preheat oven to 350 degrees. Rinse wild rice and pour boiling water over rice and let soak for 2 hours.
  2. Brown ingredients from step 2 in a skillet. Add prepared wild rice.
  3. Add ingredients from step 3 to skillet. Place in an oiled, covered 3-quart casserole dish and bake at 350 for 45-60 minutes until liquid is absorbed.
  4. Garnish each serving with 4 chopped almonds and serve.
