Quinoa Chicken Salad Recipe

Makes 4 meals or 8 snack-sized portions | Gluten free and dairy free

Step 1

1 ½ pounds cooked, boneless chicken

Step 2

1 c. quinoa, cooked
1 c. garbanzo beans, canned
1 c. red pepper, chopped
1 c. cucumber, chopped
2 c. raw spinach

Step 3—Dressing

8 tsp olive oil
8 tsp lemon juice
1½ tsp cumin
1 tsp salt
½ tsp pepper

Directions:

  1. Cut cooked chicken into bite-size pieces.
  2. Mix ingredients from step 2 in a large bowl and add chicken.
  3. Mix ingredients for dressing (step 3) together and pour over salad.
