Save Time With This Easy Frozen Chili Tip!

There never seems to be enough time in any given day to get everything done. When you’re running out the door and realize that you don’t have a healthy lunch or snack that you’ve prepared it’s such a bummer! What is a person to do on those days? Well, I have a solution for you! I call it frozen chili cups! You end up with perfectly-portioned frozen discs of chili that are easy to pack—literally just pull them out of the freezer and you’re set! This is a wonderful tip I learned from one of my Nutrition 4 Weight Loss program participants. It’s so user-friendly that I wanted to share it with you.
1. Make a batch of chili.
Of course I recommend following the Nutritional Weight & Wellness recipe for chili because it’s easy to make and so delicious!
2. Fill a one-cup muffin tin with chili.
Make sure you’re using a muffin tin with one-cup slots. This is a tin that’s a little bigger than the standard muffin tin. I found that I didn’t need to grease the cups, but you could lightly grease the tin with coconut oil if you’re worried that they’ll stick.
3. Put the muffin tin in the freezer.
Chill the tin overnight. Remove the muffin tin from the freezer and let it sit out, upside down on a cutting board, for about 10-15 minutes and the frozen chili discs will just fall out. Place the chili discs in a freezer bag.
4. Now you’re set with one-cup chili portions that are easy to grab and go.
One disc is perfect for a snack; two make a meal. Take these with you when you're on the go and by the time you're ready to eat, your meal will be thawed. Eat it cold or heat it up. Add 6-8 olives or a dollop of sour cream to make it balanced.
