Stewed Apples with Coconut Butter

If you’re staring at that bowl of apples on your counter and wondering just what apple-y treat you can make without loads of sugar, we’ve got the answer.
Stewed Apples with Coconut Butter
Serves 6
Ingredients:
6 organic apples Fresh ginger Ground nutmeg Cinnamon Vanilla extract Coconut butter
Directions:
- Peel 6 organic apples and place in a pot.
- Add about 1 inch of ginger peeled. Then add a few pinches of ground nutmeg, 2 tsp cinnamon, and about 3 capfuls of vanilla extract.
- Add 1 cup of water and bring to a boil.
- Reduce heat to medium for 20 minutes.
- Top each stewed apple with 1-2 tablespoons of coconut butter.
- Enjoy!

With a good carb (organic apples) and good fat (coconut butter), this is a perfect bedtime snack to balance your blood sugar. Taking this (delicious) step before you turn out the lights makes it more likely you’ll sleep through the night and wake up refreshed. Win-win!
