Kathy's journey toward better health started in 2019 when she began experiencing serious digestive issues. "I started listening to the [Dishing Up Nutrition] podcast. That was when I had some serious GI trouble, which prompted me to radically change my diet. I decided to try diet and lifestyle changes instead of the traditional medicine route. And I really did improve, but migraines and anxiety lingered…for years," Kathy shared.
Despite her efforts to follow various diets, including low-fat plans and excessive exercise, Kathy found that nothing worked long-term. Her fasting glucose continued to rise, and although her medical provider didn’t seem concerned, Kathy knew her health wasn’t optimal. By the fall of 2023, Kathy’s health took a turn when she started experiencing memory loss and panic attacks, only to discover that she was heading toward menopause.
That’s when Kathy took the next step in her health journey and sought help from a functional medical practitioner who helped address her hormone imbalance. At the same time, Kathy enrolled in our Menopause Solutions course, which gave her more insight into how she could manage this phase of life. Through testing, her practitioner discovered that Kathy had very low vitamin D, H. pylori overgrowth, candida, and a gluten sensitivity.
“After discovering these issues, I made sustainable changes with supplements and real food,” Kathy explained. “I definitely have hacks I’ve incorporated to improve glucose levels, like having apple cider vinegar in water before a meal, eating my food in order of veggies, protein, then starch, reducing sugar and processed foods, and walking after a meal."
Kathy has been particularly diligent with her real-food approach since the end of 2023, and the results have been life-changing. She also wore a Continuous Glucose Monitor (CGM) for a couple of weeks to track how her body responded to certain foods and activities, and found this to be helpful.
The hard work has paid off. Kathy proudly shared her incredible progress:
“After having pre-diabetes for several years with a glucose level of 106 mg/dL and an insulin level of 7.4 uIU/mL in October 2022, lab work findings in March 2025 showed a fasting glucose level of 86 mg/dL and an insulin level of 5.0 uIU/mL!!!”
But the results don’t stop there. Kathy also avoided gluten for over a year, replacing milk and yogurt with coconut and almond alternatives. This change has been a game-changer for her overall health. “Since making an effort to reduce gluten, I rarely have a migraine, which has been a huge relief,” she said. “I feel SO much better!”
