Apple Cinnamon Pork Roast Recipe
Makes 8 servings | Gluten free and dairy free
Step 1
1 Tbsp avocado oil
2 ½ -3 pound pork roast
1 ½ tsp salt
Pepper to taste
1 medium apple
Step 2
2 tsp chili powder
1 Tbsp cinnamon
2 Tbsp apple cider vinegar
1 med. onion, sliced
¼ c. chicken stock
Directions:
- Season the pork with salt and pepper. Heat avocado oil in a large skillet over med-high heat and brown the roast on all sides. Core and very thinly slice the apple. Cut slits into roast on all sides. Insert apple slices into slits.
- Transfer roast to a slow cooker and sprinkle with cinnamon and chili powder. Pour in vinegar and stock and scatter onion slices around the roast. Cook on low for 6 -8 hours.
