Bone-Building Salmon Salad Recipe

Step 1

2 cans salmon, with bones
1 – 14 oz can artichoke hearts,
drained and chopped
6 tbsp safflower mayonnaise
½ cup frozen peas
1 cup broccoli, finely chopped
1 cup cauliflower, finely chopped
1 tbsp onion, finely chopped
10 large ripe olives, sliced

Step 2

4 cups spinach
4 cups mixed greens
¼ cup slivered almonds

Directions:

  1. Combine all ingredients except spinach & mixed greens
  2. Divide spinach, mixed greens, and salmon salad evenly onto four plates and sprinkle with ¼ cup of slivered almonds.
