Chocolate Chia Pudding

Makes 6 servings | Gluten free and dairy free

Step 1

1 (14 oz.) can full-fat coconut milk
½ c. chia seeds
2 Tbsp pure maple syrup, honey or sweetener of choice*
2 scoops chocolate protein powder (we like NutriKey Paleo Chocolate)
¼ c. cocoa powder
1/8 tsp salt
1 tsp vanilla extract

 

Step 2

Toppings:
berries, coconut, almonds, chocolate chips, etc.

Directions:

  1. Add all ingredients to blender and blend until smooth.
  2. Place in a glass storage container with a lid and place in fridge for a few hours until thick.
  3. When ready to eat, scoop about 1/3 cup serving into a bowl.
  4. Add desired toppings and enjoy!⁠ ⁠

*sweeten to taste. You can omit completely, or use stevia or monkfruit sweetener instead for a low-sugar option. The chocolate protein powder is sweetened, so take that into consideration.
