Egg Bake Recipe

Makes 6 servings | Gluten-free 

Step 1

12 eggs
½ c. heavy cream or coconut milk
1 tsp salt
½ tsp pepper

Step 2

1-12 oz. package hash browns (thawed)

Step 3

2 Tbsp butter or olive oil
10 oz. fresh or frozen spinach (thawed)

Step 4

12 oz. nitrate free sausage links or patties
(thawed, cut up)
½ c. shredded cheese (optional)

Directions

  1. Preheat oven to 350º F. Grease a 13” x 9” pan with butter or olive oil. 
  2. Whisk eggs and cream in a separate bowl. 
  3. Spread hash browns on bottom of pan.
  4.  Sauté spinach in butter or olive oil. and layer over hash browns. 
  5. Add sausage next. Pour egg mixture over sausage.

  6. Bake 45-55 minutes. Sprinkle shredded cheese over top for last 5 minutes of baking.
