Kale Salad Recipe

Makes 6 servings | Gluten free and dairy free

Step 1

Large bag of chopped Kale (16oz/1 lb)
5 Tbsp Olive oil
3 Tbsp lemon juice
1½ tsp salt
1½ tsp fresh ground pepper
½ cup organic raisins or craisins
½ cup pepitas
½ cup slivered almonds

 

Directions:

  1. Massage the first 5 ingredients together.  The salt, oil and acid work to break down the bitterness and soften the kale. 
  2. Add the reminder of the ingredients, mix and enjoy. 
  3. Add cubed chicken for a balanced meal.
