Nut and Seed Granola

Makes 24 servings | Gluten free and dairy free

Step 1

1 c. slivered almonds
1 c. chopped pecans
1 c. raw pumpkin seeds 
1 c. gluten-free rolled oats
½ c. chia seeds
½ c. shredded, unsweetened coconut flakes
½ c. flax meal

Step 2

2 Tbsp maple syrup
¼ c. melted coconut oil or butter
6 Tbsp or 3 egg whites

Directions:

  1. Mix dry ingredients from step one in a large bowl.
  2. Add maple syrup and melted coconut oil, mix well.
  3. Beat egg whites until frothy. Add to nut and seed mixture.
  4. Spread onto a parchment-lined baking sheet and bake at 300 for 30-45 mintues (depending on how crunchy you like it.) Stir every 15 minutes.

Makes 6 cups, each serving is ¼ cup.
