Shaved Brussels Sprouts and Pomegranate Salad

Makes 6 servings | Gluten free and dairy free

Step 1

1/3 c. Olive oil
¼ c. Lemon Juice
¼ c. fresh chopped Parsley
2 tsp salt
2 tsp balck pepper

Step 2

2 lbs (8 c) shaved Brussels sprouts
½ c slivered almonds
½ c pomegranate seeds

Directions:

  1. In a large bowl, mix together the first 5 ingredients.
  2. Stir in Brussels Sprouts until completely coated.
  3. Gently fold in the almonds and pomegranate seeds.
